Instructions:
- 1.Preheat your oven to 400°F (200°C). Place your cast iron skillet in the oven while it preheats.
- 2.Season the ribeye steaks generously with salt and black pepper on both sides.
- 3.Once the oven is preheated, carefully remove the skillet from the oven using oven mitts. Place it on the stovetop over medium-high heat.
- 4.Add olive oil to the skillet and swirl it around to coat the bottom evenly.
- 5.Carefully lay the steaks in the hot skillet. Sear for about 3-4 minutes on each side, or until a golden brown crust forms.
- 6.While the steaks are searing, melt the butter in a small saucepan over low heat. Add minced garlic to the melted butter and cook for 1-2 minutes, stirring occasionally. Set aside.
- 7.Once both sides of the steaks are nicely seared, spoon the garlic butter mixture over the steaks.
- 8.Transfer the skillet with the steaks to the preheated oven. Cook for an additional 4-6 minutes for medium-rare, or longer if you prefer a more well-done steak.
- 9.Remove the skillet carefully from the oven using oven mitts. Transfer the steaks to a cutting board and let them rest for a few minutes.
- 10.Slice the steaks against the grain and serve them hot. Garnish with fresh herbs if desired.
